What's in a typical serving

Three corn tortillas filled with slow-braised chile beef and melted cheese, crisped in the braising fat and served with a cup of consommé for dipping.

  • 100g Braised Beef Chuck (cooked)
  • 3 Corn Tortillas (78g)
  • 40g Mozzarella or Oaxaca Cheese
  • 200ml Beef Consommé
  • Dried Chiles, Onion, Cilantro

How to make it

  1. Toast the dried chiles in a dry pan for 1 minute, soak them in hot water for 15 minutes, then blend with onion, garlic, cumin and a little soaking water.
  2. Put the beef chuck in a pot with the chile paste, a bay leaf and enough water to cover. Simmer covered for 2.5 to 3 hours until the meat falls apart.
  3. Lift out the beef and shred 100 g of it. Skim the red fat from the surface of the broth and keep it; season 200 ml of the broth with salt as consommé.
  4. Dip three corn tortillas briefly in the skimmed fat and lay them in a hot non-stick pan.
  5. Top each tortilla with cheese and shredded beef, fold, and cook for 2 to 3 minutes per side until crisp and the cheese melts.
  6. Serve with chopped onion, cilantro and the hot consommé on the side for dipping.

How to make it lighter

  1. Chill the broth so the fat sets on top and lift most of it off; brush the tortillas with just a teaspoon of it instead of dipping them.
  2. Halve the cheese or leave it out of one taco; the braised beef is juicy enough to carry the flavour.
  3. Eat two tacos instead of three and add a cabbage and lime slaw to fill the plate.

How we calculated these values

  • Calories and macros are Sporty catalog estimates for one typical serving, calculated from USDA FoodData Central values for the listed ingredient amounts.
  • The serving weight (450 g) is estimated from those ingredients; the per-100 g values and the portion calculator are worked out from it.
  • Walking times use the Compendium of Physical Activities: 3.5 MET for comfortable and 4.8 MET for brisk walking, for a 70 kg adult (kcal per minute = MET × 3.5 × kg ÷ 200).
  • Vitamins, minerals and allergens are estimated from the same ingredients with USDA FoodData Central values; % DV uses the US FDA daily values.
  • Diet labels come from the ingredients. Real values change with the recipe, the amount of oil and the portion, so treat every number as an estimate.
