What's in a typical serving
Vietnamese noodle soup of rice noodles and thinly sliced beef in a star anise and cinnamon spiced broth, topped with bean sprouts, herbs and lime.
- 200g Rice Noodles (cooked)
- 80g Beef Sirloin (raw, thinly sliced)
- 450ml Beef Broth
- 50g Bean Sprouts, Thai Basil, Cilantro, Lime
- Star Anise, Cinnamon, Fish Sauce, Hoisin
How to make it
- Char a halved onion and a slice of ginger in a dry pan for 5 minutes. Add them to 500 ml beef broth with star anise, a cinnamon stick and a clove.
- Simmer the broth for 30 minutes, skim off any fat, strain it and season with 10 ml fish sauce.
- Soak or cook the rice noodles according to the packet, drain and place 200 g in a large bowl.
- Slice 80 g sirloin paper-thin and lay it raw over the noodles.
- Bring the broth back to a rolling boil and ladle it over the beef so it cooks through in the bowl; stir and wait a minute if you prefer it well done.
- Top with bean sprouts, herbs, sliced chili and lime, and add 10 g hoisin and a little sriracha to taste.

How we calculated these values
- Calories and macros are Sporty catalog estimates for one typical serving, calculated from USDA FoodData Central values for the listed ingredient amounts.
- The serving weight (840 g) is estimated from those ingredients; the per-100 g values and the portion calculator are worked out from it.
- Walking times use the Compendium of Physical Activities: 3.5 MET for comfortable and 4.8 MET for brisk walking, for a 70 kg adult (kcal per minute = MET × 3.5 × kg ÷ 200).
- Vitamins, minerals and allergens are estimated from the same ingredients with USDA FoodData Central values; % DV uses the US FDA daily values.
- Diet labels come from the ingredients. Real values change with the recipe, the amount of oil and the portion, so treat every number as an estimate.
